Let me start with a major announcement: I made a casserole, and I liked it.
I know that not all of you reading this know me well. However, most of you know me well enough to know my feelings about casseroles. Here's the problem...Most casseroles contain cream of something soup. And, these are my basic feelings: I've watched it ooze its way out of the can...therefore I cannot put it in my mouth. It just grosses me out. And yes, I realize that this rationale could be used against me and no, I do not want to know how chicken strips are made. Trust me, its different, I don't know why, it just is.
I did however come across a recipe for a "casserole" that did not include any cream of anything. And it was good, really good! Can you hear the chorus of angels now? Hallelujah!
Anyhow, I brought a version of it to the Java Jam pot luck dinner. I realize those of you not from Wharton have no idea what that is. And most readers from Wharton under the age of 65 probably have never attended. But let me tell you - you are missing out! But that's another post. For now, here are the latest recipe trials (and errors).
Ranch Chicken Tacos
People, we are talking seriously delicious. Probably really high in sodium but otherwise healthy. Makes a ton and Emmerich was a HUGE fan! I used the left overs in the cassarole to follow, and I will definitely be making this again.

Pretty funny huh? And no, of course I did not add beans. Come on, ya'll know me better than that.

White Pizza Dip
Made this for a girls' weekend. Lets just say we I didn't have to bring any leftovers home. I made it with fontina instead of the suggested provolone.

Cream Cheese Pumpkin Bread
Also girls weekend treat. Turned out OK. Recipe recommended using mini loaf pans and I didn't follow directions so it turned out a little gooey in the middle. So possibly my fault (hence the extra .5) Still tasted pretty good but I think I still prefer traditional. anediblemosaic.com

Fresh Apple Cake
Major Fail. My mom was here when I was making this one and we both questioned it the whole way through. The dough looked way too thick, not enough apples, and we knew it might not turn out right...and we were right.
